Every once in a while I come across a recipe that allows me to feel frugal and virtuous by using up produce that I would otherwise need to throw out in a few days. When the dish turns out to be really delicious, nutritious, AND easy to prepare I feel as if I’ve won the cooking trifecta. With some cherry tomatoes and green onions getting a little wrinkly, and some thawed halibut fillets intended for the night before, I did a Google search on “what’s for dinner tonight” and found “Dinner Tonight: Quick and Healthy Menus in 45 Minutes (or Less)” on Cooking Light.Com’s website. Within the Quick Seafood Dinners section was Pan-Grilled Halibut with Chimichurri served with Charred Vegetable Rice. A perfect match.
The rice and vegetable dish was easy to assemble and was just the right balance of flavor, color, and texture that I find so satisfying. I have to say it tasted so good I could have made a meal of it by itself. I doubled the recipe and it provided nice helpings for two with about a cup left over for the good Doctor’s lunch. The halibut could not have been easier, a little salt, pepper, olive oil in a really hot griddle pan, and grill the fish 3 – 4 minutes per side. Watch the fish closely because halibut can go from tender and juicy to dry and fibrous in a flash.
Now the fun part. Before fixing the rice and vegetable dish, and prepping the fish, I assembled the chimichurri. Chimichurri is usually made from chopped parsley, minced garlic, olive oil, oregano, and white or red wine vinegar. Additional flavorings such as paprika, cumin, thyme, basil, cilantro, and bay leaf may be included. If there is any herb that reminds me of summer it is basil. This version was made with fresh basil, cilantro, shallots, lemon juice, and olive oil, and tasted like liquid summer. Served over the fish, and along side the rice and vegetable medley, it gave the preparation that fabulous finishing touch that makes a simple dish a winner. I highly recommend that you try this gluten-free, egg-free, totally awesome recipe. I got an extra hug and kiss for this one.
