We have a friend who’s in town on a work-related project and we were lucky enough to snag some of his time for a weeknight get together. Guests arrive at 7:00 pm. There’s not too much time to plan for the dinner: Today, I need to make out a grocery list, shop, make the dessert, clean the kitchen, and set the table. Tomorrow, I will need to sweep, dust, and wipe down the bathrooms and prepare the main course. The good news is I am preparing a one-dish, main course, with an appetizer, and dessert. I can make most of the meal ahead of time.
Hors D’oeuvres – I’m warming up some chicken meatballs simmered in a little blood orange sauce, we have a nice French cheese with garlic and herbs, and some cornichons.
Appetizer – I’m preparing a refreshing Butter Lettuce with Créme Fraiche and Poppy Seeds salad. It’s simple to prepare an hour or two ahead of time and it should help balance the rich main course.
Main Course – Chicken Pot Pie. This is a slightly fancier pot pie than most. It features a buttery, herb and buttermilk biscuit crust along with a rosemary infused chicken and vegetable filling. It’s another one of my top 10 recipes. I think I will offer a little Applesauce For Grownups on the side.
Finally, for Dessert, a no-bake, icebox cake that is always popular: Ginger-Mascarpone Icebox Cake – This is a creamy, cheescake-like dessert with a double hit of ginger snaps and candied ginger.
