I am making this Classic Vanilla Layer Cake with Mascarpone Frosting & Raspberries for a birthday party tomorrow. I have made this sensational cake before to great acclaim and it is a personal favorite of mine. It’s not super sweet, has a nice moist crumb, and is especially good in early summer when fresh local raspberries are available.
This is a recipe from issue #71 of Fine Cooking magazine and is available on their excellent website. Fine Cooking is an outstanding publication that I have subscribed to (and kept every issue) since its inception. In my opinion it is one of the best cooking magazines around and I highly recommend it for cooks of all ages and experience levels.
