Buckles are a delicious way to celebrate seasonal fruit. Buckles, it is thought, get their name from the fresh fruit placed on top of the batter that then sink into the cake causing the surface to “buckle”. My thought is that it might have something to do with my belt needing unbuckling after having eaten one. This recipe comes from a book of rustic fruit deserts that I will review in my next post. There are buckles, galettes, cobblers, pandowdies, and slumps to be enjoyed when, as I did today, one finds a quantity of fresh fruit. My benefactor today was the Portland American Diabetes Association who had blueberries left over from their StepOut fund raiser last Saturday. In return I have baked them a Blueberry buckle. I had to try a little bit of one of them just to make sure that it came out OK and I assure you it did.
