A busy household does not mean you must be exiled to the fast-food, take-out, or Hamburger Helper lines – there are plenty of good things to cook at home that come together quickly and offer interesting flavor and nutrition. Here’s another really delicious and easy dinner recommendation from my busy household. Ginger-Sesame Chicken Lettuce Wraps are a great weekday meal and not a speck was left over in our house last night. The combination of chicken, ginger, sesame, and the cool butter lettuce wrappers was a hit.
The recipe does not specify whether to use ground chicken dark meat or light. I used dark meat because I find it more moist and flavorful. It’s a good idea to prepare the ingredients first – you wont want to be cutting water chestnuts into matchsticks while your chicken is stir frying. Once the prep work is done the dish comes together very quickly. The recipe say it serves 4 but we three adults could have eaten an bit more so I suggest increasing the recipe by 50% to 100%.
